For the first time it is football season at my house. Twice a week we head over to a local church’s soccer fields for flag football. We have one night of practice and another for games. We are there for over an hour both evenings. On those nights I need to come up with quick dinners I can put together for my family before we head out of the field. The dinners need to have things I can prepare ahead of time or pull together quickly.
Searching for Rice Recipes
I headed over recently to SuccessRice to search for yummy recipes that I could serve my family featuring Success® White Rice. My guys really enjoy having rice at dinnertime. It is something I keep in my pantry year round to use as a side dish or in main dishes. It was fun to search through the over 300 rice recipes on the site. I finally had to narrow the search to rice recipes that Feed 4 for $10 meal that had a high star rating. That search lead me to a recipe for Rice Lasagna that looked delicious. ( I only have three in my family, but we love to have leftovers.) The fact that the recipe called for ingredients I already had or could purchase for a reasonable price was a bonus. That is my kind of rice recipe.
Preparing Rice Lasagna
To save some time I browned the ground beef the night before a football practice day. It was great to pull it out of the fridge and have it ready to go in the recipe. The rice took only 10 minutes to boil in the bag. (I loved having it premeasured and ready to go.) That was just enough time to pulled out rest of the ingredients we would need to make the rice lasagna. (That took no time at all. ) We still had time left to prepare the baking dish and mix the three cheeses in the recipe together. (One of us sampled a little of the cheese mixture. Maybe two of us did.)
Then we did a quick warm up of the meat in a pan and adding tomato sauce and garlic powder to it . Once that mixture was well blended and warm, we began layering the ingredients to create the lasagna. We have made traditional lasagnas often enough that JDaniel has layering of ingredient mixtures down.
He did decide we needed more Parmesan cheese than I thought we did ,but a little extra cheese isn’t a bad thing have on top of a casserole.
When we had completed the process, the rice lasagna was placed in the oven for 20 minutes. This rice recipe came together fast and cooked quickly. We were able to have a really delicious quick dinner in no time at all.
I will definitely be going back to the Success® Rice website to try more of their rice recipes. My guys really loved the rice lasagna recipe.

I confess that I love rice and frequently have it as a side. I also have several main dish casseroles I make from rice, like jambalaya and Costa Rican casserole. The rice lasagna sounds intriguing. I may have to try that.
