I was invited to participate in the Swanson Mommy Blogger Challenge. Each blog in the challenge was asked to come up with a recipe using a can of Swanson’s chicken. If I can be up front and honest with you, I am not a much a cook. I have just gotten to the point where I can follow a recipe and experiment with it if I don’t have all the right ingredients. The moms in my playgroup know that to come up with this recipe I bounced every ingredient past them. My friend from playgroup Heather emailed me back and forth a few times with ideas too. This recipe for Fruitful Chicken Salad is really simple and may already be something that you make at home. For me this is a new recipe and creates something both my guys wanted seconds of.
Ingredients:
9. When serving the salad, place it on a bed of lettuce. Sprinkle a few on the remaining walnuts on the top of each person’s serving.
This salad serves 4-6 if used as a main dish.

That recipe sounds like just the new thing for a summer meal. I’m adding that won too my book. mmm I make chicken salad for my husband’s lunch sometimes, but only use onion & relish with the mayo.

I would combine Swanson’s Chicken with cheese and guacomole as a stuffing for Hispanic style tacos. That and a bottle of cold beer.

I like chicken salads with not much mayo (half plain yogurt helps) and lots of grapes.
I learned to make sure and keep dishes with mayo chilled.

Because I’m a vegan, I wouldn’t eat the chicken. If I win, I’m going to go shopping and fill a few bags with more cans and deliver them to our local food bank. Summer is a hard time for them, and they could use the help!

I learned that for heart healthy chicken salad cutback on the mayo and add plain yogurt instead.
we’d add celery and onions along with my stir fry chicken to it, and heat it all up and we’d have it over salad, and we’d have it 4 lunches and sometimes just 4 dinner

Ah, silly me, I couldn’t figure out how to vote for you until I actually READ what to do! I loved using my coupons! We made chicken salad with black and cayenne pepper, plus celery, onions, light Miracle Whip and pineapple.
I would love to try this recipe, but omitting the cantaloupe. No one in my house likes it.
I use mayo, mustard, relish, garlic powder and some onion powder in my chicken salad.
If I’m feeling zesty I add cranberries, walnuts and fresh grated parmesan cheese.
I love chicken salad with grapes!~
