Muffin Tin Monday- Back to School

growing & learning with him

Today is National Tooth Fairy Day! I decided to celebrate by having JDaniel sink his teeth into teeth.
He had pickle lips with green pea teeth, a carved apple, veggie chip lips and a tongue with a rice inner mouth and raisin teeth, banana lips with red grape lips, and a ham and cheese sandwich mouth.
JDaniel ate everything except the rice. I really should have used cherry yogurt for the inner mouth. He would have inhaled that.

We met some friends at The Upstate Children’s Museum last Wednesday and I decided to pack JDaniel a muffin tin picnic meal.

He had apples, apple juice, potato salad with bacon and tomatoes, Arnold’s Mini Thin sandwiches, and a pickle. He was dying to dig in and eat it before left home, but I was able to convince him to wait.
We are loving the Arnold’s Mini Thins. JDaniel is always telling me that he is still hungry. Now he can have two sandwiches and that seems to fill him up.

I was planning on having our picnic in the bug sculpture garden at the front of the museum, but JDaniel’s friend Ryan was already starting his picnic lunch on the side of the building when we got there. He unwrapped the muffin in and starting eating. I tucked the toaster baking pan I carried it on into my purse and then I ate my lunch too.
JDaniel was so happy to have lunch. He really didn’t care where he ate it.

I was Stumbled an amazing recipe for a Pressed Italian Sandwich from the blog Following in My Shoes. It truly looked amazing. The sandwich is filled with salami, provolone cheese, and a mushroom tomato spread.
My mom gave us a Panini press about a month ago and we hadn’t had a chance to use it. This was the perfect reason to take it out the box and use it.
It was so easy to put the sandwich together and the end result was amazing. My husband commented that pressed foods just taste wonderful together and he was right.
JDaniel got tomatoes and pickles on coffee stirrer, and limas beans with parmesan cheese to go with his sandwich.
I am not sure why he wasn’t hungry when we all sat down to eat, but he wasn’t. It took a long to time eat this meal, but he didn’t want me to put it away for later.

I am been asking other bloggers to share their recipes with me this summer. I promised to feature them in one of JDaniel’s muffin tin meals. I had three bloggers share their recipes. Two of the recipes have been featured already. The other will be featured next week. Mom to 2 Posh Lil Divas shared an idea rather than a recipe with me. Her idea was to spell Jdaniel’s name in French toast. I only have large letters in cookie cutters. The amount of French toast is would take to spell his name would be more than he would probably eat.
I decided to take her idea of French toast and search Pinterest to see what recipes came up. French toast on a stick stood out to me among the rest of the ideas I found. I had previously found a pasta salad on a stick recipe on Pinterest and pinned it to one of my boards on the site.
That gave me two meal ideas on a stick. Both ideas could be served at a brunch or a lunch. Voila! Brunch on a stick became the theme for this week’s tin.
JDaniel has fruit with French toast served on a coffee stirrer rather than a real stick. The pasta salad on a stick is made of cold cheese ravoli, pepperoni, and grape tomatoes.
There is a cup of syrup and a cup of Vidalia onion salad dressing and a cookie in the second row.
You may be asking what is Pinterest? It is a booking site that allows you to bookmark links you love and displays them on small boards. The boards are like bulletin boards. You can set up board for specific areas of interest. I have a board for Muffin Tin Monday Ideas and one for Read.Explore.Learn. Ideas.

If you are interested in joining Pinterest, please let me know. It is by invitation only right now, but I can give you an invite.
I would still love to try some of your recipes! If you have one you want me to try, please include the link to it below.

We seem to be having major rainstorms every other day here in South Carolina. We’ve see wind and we’ve seen rain. We’ve heard thunder and seen lightning . There have also been rainbows.

Some storms have been strong enough to break limbs off the birch trees in the backyard. This limb cracked in an earlier storm and then fell down completely in one two weeks ago.

I decided to create muffin tin in memorial the summer storms.
The tin contains a rice cake cloud with Alouette’s new Light Spinach Artichoke Soft Cheese ( I will be reviewing it later this week.), chicken nugget lightning bolts, blueberry balls of hail, catsup to dip, broken trees tops of broccoli and cauliflower, and playdough looking rainbow cookies.
The rainbow cookies are loosely based on Red Ted’s Rainbow Cookie recipe. I tried to take a short cut by using cookie dough from a mix. It was way too sticky and looked like playdough when I added flour to the dough. I really should have used her recipe and made them from scratch. JDaniel loved them, but they would have been better without the short cut. If you want to see them as they should have looked, please check out her link above.
I am still looking for recipe ideas to feature on Muffin Tin Monday. I am calling this series Serving Lunch with JDaniel4’s Mom. Just leave me a comment on this post or an upcoming Muffin Tin Monday post with a link to a recipe you think I should get JDaniel to try a muffin tin. If I use your recipe, I will mention your blog in the post it appears in along with a link back to it

Last week I started the Serving Lunch with JDaniel4’s Mom series on my Muffin Tin Monday posts. It will run through July and August.

How does the Serving Lunch with JDaniel4’s Mom work?

I am participating in the Displaying Independence sponsored by Mom Loop tomorrow so, I decided to post this yummy tin a day early.
JDaniel had a burger with a cheese and bread star, Two Bears Farm’s Corn and Black Bean Salad, potato salad made with red potato stars, strawberries, red grapes and peanut butter fudge brought for me to the Type A Conference by Lisa of Two Bears Farm.
JDaniel loved everything. He is still into eating with his hands rather than a fork. He was able to pick up the stars, burger and fruit with his finds. A fork was used for the corn and black bean salad.
The corn and bean salad is the first recipe to be featured in my summer series. Serving Lunch with JDaniel4’s Mom series. It runs through July and August.

Did you know that Yankee Doodle, his girl friend, her poodle, and a few other animals opened up a noodle restaurant called Yankee Doodle’s Noodles? We didn’t either. We found out about it when we read Mary Ann Hoberman and Nadine Bernard Westcott’s book Yankee Doodle.

It is a fun rhyming book that is very loosely based on the patriotic song Yankee Doodle. The story is really silly and filled with humor that made JDaniel laugh.

Today’s muffin tin lunch is loosely based on the book. He had mac and cheese, apple stars, strawberries, cantaloupe on toothpicks, and chocolate dipping sauce with fireworks red sprinkles.
JDaniel hasn’t had a lot of experience with toothpicks. He got a lot of practice with this lunch. He loved dipping the fruit into the chocolate.
Remember: Next week I will be starting the Serving Lunch with JDaniel4’s Mom series. It will run through July and August.
